Carolina

2017

My husband was super excited about this spicy Carolina Panthers inspired pizza. It did not disappoint!



Carolina Panthers BBQ Pizza

Crust

Any crust you want, we went with a Publix pre-made dough this week.

Sauce

Carolina style BBQ sauce. This sauce is known for its vinegar base. So tangy!

Toppings

Bacon
Red onion
Baked Beans
Jalapeno slices (fresh)
Sweet potato cubes (we cooked this on the stove top with olive oil, salt, and pepper for about 20 minutes before putting on the pizza.) The sweet potato is North Carolina's state vegetable! There is your random fact for the day.

Cheddar cheese

We also chose to add a little bit of MorningStar Farms veggie crumbles, for texture and a little protein. Don't judge me too harshly, meat lovers! This pizza would obviously be a great showcase for pulled pork, I may try that next time.


After it came out of the oven, we topped it with diced pickles and tomatoes, and drizzled on a little bit more of that sauce.

2014

The NFC South rival Carolina Panthers always come to town with an amazing defense and a bad attitude. Luckily, the great state of North Carolina offers some tasty local cuisine. Many delicious food items also originate in Carolina. For our football game day, the main dish of the day was Pulled Pork Nachos.
Top tortilla chips with the following items:
 Pulled Pork
Cheddar Cheese
Queso
Jalapenos
Sliced Okra Pickles
Baked Beans
Carolina-Style BBQ Sauce

Heat in the microwave for one minute, until you have a gooey pile of yummy.

After heating, add the following items:
Tomatoes
Sour Cream (I like to stir in a little lime juice for this recipe)
Shredded Lettuce



We served these delectable nachos with two Carolina originals: Krispy Kremes and Cheerwine.
