Rise Up! The Atlanta Falcons are playing in the NFC Championship game. In honor of this illustrious event, we decided to make some home-based nachos.
The Dirty Bird Nachos with Peach Guacamole
Chicken
3-4 chicken frozen chicken breasts
1 jar of hot sauce (we used Texas Pete's original)
4 cloves of garlic, minced
1/4 cup of lime juice
1 can of black beans
1 cup of diced onions
1 sliced jalapeno
1/2 cup chicken broth
1/2 cup water
salt
pepper
cumin
chili powder
crushed red pepper flakes
Combine all in a crock pot, low setting for 8 hours then shred chicken with two forks.
Peach Guacamole
2 avocados, mash
1 cup sour cream
1 diced peach
1 chopped jalapeno
1 chopped tomato
1 packet Concord guacamole mix
Mix all, top with the juice of one lime & chill for at least an hour.
Cheese Sauce
2 TBSP Butter
2 TBSP flour
Whisk and heat for a few minutes, then add 1 cup of milk.
Stir in 6 ounces of cheese (I used the shredded Mexican blend)
Then add a dash of chili powder, a big pinch of salt, and 1 chopped jalapeno.
Sour Cream Topping
1 cup sour cream
zest of one lime
1 TSP olive oil
salt
pepper
cilantro
Layer the chicken onto the chips. Top with some of the remaining sauce from the crock pot, lettuce, sour cream topping, cheese sauce, guacamole, tomato, and whatever else your nacho loving heart desires.
