CookPlayBook is kicking off the season with some opening night nachos honoring the great city of Denver and the amazingly beautiful state of Colorado. What does everyone think about the Super Bowl match up to kick off the season? There have been so many off-season moves, it is not even the same teams. Since Payton Manning is Nacho quarterback anymore, Bronco fans, you can drown your sorrows in this tasty recipe.
Bronco Bison Nachos with Green Chile and Beer Cheese Sauce
1 pound of buffalo meat
I cooked this in a little olive oil, then seasoned with:
1 Ancho Chile
For the cheese topping:
1 beer-for this recipe I used Fat Tire from New Belgium in Fort Collins, Colorado. I have been there, and it is magical.
I used equal parts of each heated over medium.
Frontera Enchilada Sauce (you can make your own Green Chili, I just love all things Frontera)
1 ear of corn
1 small yellow onion
I cut the kernels off of the cob, medium diced the onion, seasoned with salt and pepper, and cooked for a few minutes in 1TBSP of olive oil.
1 jalapeno-seeded and cut into rings.
For the other topping:
Juice of one lime
I am currently trying to re-train my brain to stop calling the Broncos the "Donkeys". I have been calling them "Donkeys" for decades now, and it is a hard habit to break, for it rolls off the tongue with amusement and ease. But I have way too many family members and friends who love them some D......Broncos.
